A disposal grinds solids into pieces small enough to pass through with the water, but it does no work on grease already coating the pipe past the trap. A backup right after running it usually means that coating has finally closed the line.
Grease tends to build back up at the same point it collected before, because that stretch of pipe already runs a little narrower than the rest of the line. It is the kitchen line's whole reason for recurring faster than other drains in the house.
02Where it sits
A kitchen clog is not always the same clog. Where it tends to collect changes what clearing it actually accomplishes.
Grease is still warm enough to move when it leaves the sink, and it starts cooling the moment it does. Most of it sets up close to the trap, within the first stretch of pipe under a single bowl, which is why one side of a kitchen sink is often the slowest to drain.
When both sides of a double sink back up together, or the dishwasher backs into the sink, the blockage usually sits past the trap, where the branch line runs longer and flatter and grease has had more distance to cool and cling before the water carrying it slows down.

03How it works
Grease leaves a pan or a pot as a warm liquid, thin enough to run straight down the drain without any trouble. It does not stay that way. As it moves away from the sink and into cooler pipe, it slows, thickens and finally sticks to whatever it touches, usually within the first several feet of line. Every wash adds a little more to that same coating rather than starting a new one somewhere else, which is why the buildup is steady rather than sudden.
The disposal changes what goes down the drain, not what happens to grease once it is there. It shreds scraps into pieces small enough to travel with the water, which keeps solids from catching in the trap, but grease was already a liquid before it reached the disposal and stays one on the way out. Grinding does not remove it, cool it faster or keep it from coating the line, so a kitchen with a disposal can still build the same clog as one without.
